I found this recipe on a pinterest board & when I asked my husband what recipe he wanted me to start with today, he told me this one looked good. I have to agree!
Ingredients:
1 ½ lbs boneless skinless chicken breasts (cut into 1” chunks)
Oil (for deep frying)
Batter- 4 tablespoons cornstarch
¼ cup flour
1 teaspoon baking powder
½ cup water
½ teaspoon salt
1 egg
1 egg white
Sauce-
1 ½ tablespoons oil
2 teaspoon ginger (minced)
3 tablespoons garlic (minced)
1 teaspoon salt
3 tablespoons honey
1 teaspoon rice wine vinegar
½ cup water
1 teaspoon cornstarch (mixed with 1 teaspoon water)
Sesame seeds (for garnish)
1. Mix all ingredients for the batter in a mixing bowl, until smooth. Cover, and let sit for 30 minutes.
2. Add the chicken to the batter & toss to coat.
3. Heat fryer to 350 degrees. Fry the chicken in patche for 2 minutes, or until the batter becomes firm. Dry on paper towels. ( I didn't use a fryer, just a regular pan, while monitoring the temperature of the oil. I also varied on the cooking time a little because my temperature wasn't exactly 350 degrees)
4.To make the sauce. Heat 1 ½ tablespoons of oil in your wok. Add garlic and ginger and stir fry for 30 seconds. Add salt, honey, vinegar, and water. Mix well. Combine 1 teaspoon of water with 1 teaspoon of cornstarch. Add to the sauce and Simmer for 2 minutes. ( Again, I just used a regular sauce pan. I also blended the sauce together in the end to make it very smooth, so there were no minced chunks. My husband always does that when he is making bbq sauce & I think it looked ALOT better!)
5. Coat chicken with the sauce and garnish with sesame seeds. Serve with white rice. ( I didn't garnish).

We loved the recipe. We both agreed that we should double the sauce so there is leftover to use on the rice or broccoli if we wanted. We also both agreed that the garlic was a bit much for our taste, & I LOVE garlic. I think next time I will use 2-2 1/2 tbs instead. The recipe also says it makes 4 servings. But with 1 man & woman we ate about 2/3 of it, so I would say it realistically serves 3 people- maybe 4 women :)
